You’ll find sushi done the old-fashioned way at Sushi Tsujita. The restaurant uses a century-old way of preparation, curing the seafood with seaweed, salt, and vinegar, in order to preserve the flavor. Sushi bar Go’s Mart has been cleverly hidden in a strip mall for the past sixteen years. The surprising location has a creative and ever-changing menu, with dishes that include smoked ocean trout, live scallops, tartare, snow crab, toro fatty tuna, kelp halibut, and uni.

Reservation-only Beverly Hills hotspot Nozawa Bar has only ten seats, but it’s worth the wait and the steep set-price bill. The intimate experience features a seasonal and multi-course menu with fish found at the markets that morning by the chefs themselves. Previous dishes include Japanese jellyfish, monkfish liver, and Maine lobster nigiri.
